Tropical Fruit Salsa or Salad
This is a refreshing and healthy way to get in your fruit.
Ingredients
Directions
- Chop the pineapple, mango, strawberries, and kiwi and place in a bowl.
- Chop the mint fine (it’s very strong so a little goes a long way), and add to fruit.
- Add the blueberries whole and then squeeze the juice of 1 whole lime over fruit, mix and serve.
- You can make this the night before, but I would recommend adding the lime juice and mint shortly before serving.
- Note: you can chop the fruit in larger or smaller pieces depending on whether you want to eat it like fruit salad or on fat free tortilla chips as a salsa.

Try mixing in a couple of tablespoons of your favorite low-fat yogurt in with the fruit. It makes a great low-cal dessert.
