Cauliflower and Bean Aglio-Olio
A vegan, dairy-free pasta for lunch or dinner.
Ingredients
Directions
- Coarsely chop garlic and sauté in 2 tbsps olive oil.
- Add cauliflower, beans, seasonings, and half cup water. Stir and cover. Allow to simmer on low heat.
- Cook pasta according to packaging.
- Drain pasta and combine with cauliflower-bean mixture. Add the rest of olive oil and mix.
- Transfer to plate then serve.
