Belgian Waffles

A great substitute for waffles.

Ingredients

Directions

  1. Preheat waffle iron. If no waffle iron is available, recipe can also be used for fluffy pancakes, but that is not as much fun!
  2. Beat eggs with electric mixer on high for 1 minute to make them light and fluffy.
  3. Add all other ingredients (nutmeg is optional). Beat until smooth.
  4. Spray waffle maker with PAM or other cooking spray. Pour all batter, should fill bottom tray. Close and cook as usual for waffles.
  5. Top with Smart Spread or other butter substitute, a sprinkle of splenda, and/or some sugar free syrup.
  6. Serve with V8 for a complete and satisfying breakfast.

Wow, these waffles taste amazingly good. I used truvia instead of Splenda - adds some sugar alcohols, and deducts almost 3 carbs. The first batch stuck to my (old) waffle iron, so the 2nd batch I added 1 tsp oil and they were perfect. Everyone in the family, including those not on Atkins, loved them.

Very good. My daughter loves them too. She is very picky so this is a good thing :) Thanks for sharing we will be making these often.

Though it does not taste much like an actual pancake I do think that it was delicious!! It kind of reminded me of the taste of french toast. Absolutely delicious and high in protein! I`m not much for eggs so this may be a way for me to work eggs into my diet!

the waffle ends up mushy with a bad after taste.

Has anyone tried making them with Egg Beaters instead of eggs? I wonder if it would work and still taste good....

Considering the trade off of carbs, very good.

I make waffles similar to this with my protein shake powder. I actually use them to make sandwiches for lunch as well as breakfast. They make a great bread substitute.

Wow, these were fantastic! I left out the sweetener because I used a little sugar free syrup :)
