Losing 1.5 kg a Week

I am absolutely pissed. Nothing I do seems to have any long reaching success. As soon as I start losing weight my body adjusts and puts it back on. I am getting to the point where I might just consider not eating at all until I get below my goal weight and then just eat what I want until I am 10 lbs over and then starve until I am 10 lbs under. I really don’t know what else to do. I am putting so much effort into eating healthy and exercising I really am disgusted with how little progress I am making. I was instructed to eat more calories because I was gaining weight at 1600 per day. According to FatSecret I should be having steady weight loss at 2500 calories per day. After my nutritionist told me to increase my calories as well I did so and lost weight two weeks in a row (a little over a pound per week) but now I am up 5 lbs in one week, completely negating my losses and adding extra. The yo-yo effect is still happening. I am going to drop my calories again and see what happens. Maybe I need to constantly shock my body with feast/famine cycles. I don’t know. All I do know is I am sick of putting in such a huge effort for such meager success that then just gets wiped out.

Does anyone have a good whole wheat bread recipe? I am eating whole food plant based Mediterranean. The emphasis is on plant based, not exclusive. I still eat meat and cheese sparingly. I also eliminated manufactured food including store bought bread. I have learned how to make delicious crusty, chewy, dense Italian rolls, but they use white flour. I want to replicate that texture (thick, hard crust, dense interior) with whole wheat flour but I end up with dry, thin crusted bread that disintegrates into crumbs. I am not an expert baker. I just mastered making one type of roll in one specific way. I am hoping someone has a recipe for a wheat bread like this.
