Mini Broccoli Crustless Quiche

Mini broccoli, tomato, and mozzarella quiche.

Ingredients

Directions

  1. Preheat the oven at 175 °C.
  2. Rinse and dry the broccoli. Cut the broccoli into bite size pieces. Dice tomato into small pieces.
  3. Mix eggs, broccoli, tomato, and the mozzarella. Add salt and pepper to taste.
  4. Transfer mixture to a greased (with oil) muffin tray.
  5. Bake for 20-25 minutes until egg hardens. Remove from oven but let it set for a few minutes before removing from tray.
  6. Enjoy.
