Peanut Butter Banana Chocolate Chip Muffins

Tasty muffins with peanut butter, banana, and chocolate chips.

Ingredients

Directions

  1. Pre-heat the oven to 350 °F (175 °C) and line and/or grease 12 muffin tins.
  2. In a large bowl, combine the flour, sugar, brown sugar, baking powder, salt and cinnamon and set aside.
  3. In another large bowl, combine the mashed bananas, milk, peanut butter, egg, oil, and vanilla and mix well.
  4. Gradually mix in the dry ingredients until just moistened, then fold in the chocolate chips.
  5. Bake for 22-25 minutes or the muffins are slightly golden and a toothpick comes out clean.
  6. Allow to cool a bit before removing from the tins, then either serve warm or allow to finish cooling.

I made these for my family and they loved it. I made 24 muffins though so they would be 205calories instead of 410, and everyone was happy with the size of the muffins. (1 1/2 T of butter per muffin made them about the size of a cupcake).

so i doubled this receipe and it made 42 large muffins. i filled the tins(standard) nearly to the top. i recalculated using regular pb and my calorie count was significantly less- right about 200 calories a piece. woohoo! very good receipe for a treat now and then.

I added this to my cookbook anyway, there are ways you could def. bring the calories down. Substitute EB for eggs, Sucanet for sugar and WW flour instead of White. Also use Smart Balance oil instead of the Canola. Recipes with Bananas are easy to tweak and make healthy because the bananas overpower the taste of the other things anyway. & @Crash- Grow up!

these tasted freaking great. @Crash 1498 you can still maintain a healthy diet and still have foods like these muffins. Just don't eat them everyday.

They may taste good, but 410 calories and 16 grams of fat for 1 muffin? I don't think so. I'll find something else. I'm here to loose weight not gain it.

I love these and so does my entire family, we're so addicted! Watch out for the 9 pt value if you're doing weight watchers (as I am)-that's a lot of points when you're only allowed 23 per day!!!
