Directions
- Beat eggs in a small bowl.
- Heat 1/2 tbsp olive oil in hot wok, scramble eggs, and reserve.
- In wok, add remainder of olive oil, onion, garlic, and pork. Cook until browned.
- Add tomato, sugar, pepper, and salt. Add rice and mix well. Cook for 6-8 minutes.
- Add eggs and soy sauce, mix well.
- Note: pork can be substituted with chicken or beef.
