Eggplant Chips

Sliced eggplant baked with parmesan cheese and herbs makes this treat addictive.

Ingredients

Directions

  1. Pre-heat oven to 375° F (190° C).
  2. Pour olive oil on cookie sheet and sprinkle with the garlic powder. Swoosh the cookie sheet around to mix and coat the sheet well.
  3. Slice eggplant into about 1/4" or 1/8" thick rounds, depending on your taste and kitchen tools.
  4. Place eggplant slices on cookie sheet. Rub each slice into the olive oil and garlic powder coated cookie sheet, then turn each slice over and rub around to coat the other side.
  5. Sprinkle lightly with half of the Italian seasoning and parmesan cheese. Turn over gently and sprinkle remaining Italian seasoning and parmesan cheese on other side of rounds.
  6. Bake for about 10 to 15 minutes, depending on thickness, on each side. (Turn over when browned on the bottom).
  7. Note: this is a recipe you really need to watch cooking to see how well it is browning. They are done when they look caramelized on each side.

My husband made this over the weekend for our "snack". It was very good! The only thing we will do different is to use a spray olive oil next time. Quite tasty!

These are SOOOO good! I made them last night. I followed the recipe and didn't use nonstick spray. They were very filling and my husband even liked them.

EXCELLENT tip huck180! In fact when I made this I wondered about a better way to apply the oil, I thought Id try it next time by putting some olive oil into a mister bottle. Your way sounds much simpler! LOL Thank you!

ALthough Olive oil is a "good for you" fat, I like to sub it out for nonstick sprays- they now make olive oul in a spray- i use it for recipes like this. I know it doesnt seem right, but you can TOTALLY spray non-stick to the top of foods for cooking.... I have cut major calories by doing it this way, and i think it would work great for this recipe, since egplant is really good at absorbing all that oil really quick. I LOOOOOVE egplant and will HAVE to try this one... good stuff!
