Thanks everyone! I was worried that the fab low carb cheesecake my friend delivered to me on Tueday would set me back. *grin* But it really *isn't* off my diet and I'm soooo happy to have hit this goal!

Homemade cheesecake. It is the basic Lindy cheesecake recipe (not sure if you can see it in my cook book) but with splenda instead of sugar, an almond meal crust and this particular one had coconut instead of almond flour in the filling (the first one was all almond). Both ways tasted just like a New York style cheesecake and people who I fed it to without mentioning the low carb nature didn't notice at all. That is a bit over 6g carbs a 1/16 pan slice but I can budget for that. In fact today I budgeted to have two. LOL But folks are coming over this evening and I hope to feed the rest of it to them so it doesn't tempt me for days. There are various other low carb cheesecakes that don't have the 3" tall NY thing going for them that have less carbs... but cream cheese is generally Atkins friendly and using splenda and potentially going crustless altogether can make a really low carb dessert. This one is just as decadent as the original though. :)
