Crunchy chicken and creamed spinach! Wow, today was an adventure for me in my upstate NY winter wonderland. It all started yesterday when I decided to buy a snack....crunchy....all I could think of is pork rinds. So to the store I go, hunt those critters down and buy them. Today was a day off today, so I am playing on the puter killing orcs and trolls when the snack attack hits! YES!!! I have something crunchy I can eat!!! I get out the bag, open it, smell it...hmmmmm, I do not know if I can eat this. So I wait a minute..smell again...NOPE, not gonna be able to do this. DARN! I know hubby wont eat them..what to do. OH well, put them in the BACK of the cupboard and get my yummy, chocolate soymilk.

Later, thinking about dinner..what can I do with chicken? Well maybe you guessed the rest. I took boneless, skinless chkn breast, cut them into big wide strips. I took the pork rinds and crushed them with a metal ladel in a bowl. In a pie plate, I broke eggs and mixed in whipping cream. I dipped each chkn piece in the egg mixture, then rolled it in the crushed rinds. It looked like corn flakes. I layed them out on a olive-oil greased cookie sheet, sprinkled pepper and parmesan cheese on em, and cooked!!! I served them with an awesome dipping sauce: Mayonnaise, mustard and cinnamon. Hubby devoured them down. I was waiting for him to ask what the coating was because he knows I am carb free....but he did not stop to breath when he ate these. So, later I will type up the recipe for my cookbook, and submit it to FS like I did another one (still waiting)....but I put it here in my journal so I could find it, and to share with anyone interested! Side dish with this: chopped spinach mixed with red bell peppers and whipped cream cheese. This Atkins stuff is GREAT!!!

Mmmm! Sounds great! I will have to try that. I'm not one who can snack on pork rinds either - not that I've ever tried (smile), but it is totally not appealing to me in the slightest bit. But me thinks I could handle using it like you did. I'd love your recipe! Can you PM it to me b/c it takes forever for stuff to get approved/published thru FS. So glad your dinner turned out so nicely and that your husband enjoyed it so. I'm sure he's thinking "I can get used to this!" Well done Robin! [Step aside, Paula Dean; Miss Robin's in the house!!]

Actually, Robin that is the way that Atkins recommends making fried chicken, or fried pork, or fried veggies. If you put them in a blender and grind them, they become the consistency of flour or fine cornbread, and can be used to bread any meat or veggies and fried or baked. There are also recipes that use parmesan cheese for the breading also. And actually the pork rinds are delish, especially with some melted butter, some splenda, and some cinnamon on them or just some butter and a little salt or garlic or dipped in Franks Hot Sauce. They really are tasty.

awesome, thank you for the tips! I just love the idea of something crunchy, similar to chips, being a lo carb food and I intend to use them in my cooking. This Atkins stuff is an adventure, fun, and yummy!
