rockseer's Journal, 19 Jan 11

Wednesday, snow and ice in upstate New York and I am in love with life! I think I am ok with this ATkins way after I restocked my frigerator with yummy stuff...chunky blue cheese dressing, fresh avocados, sirloin burgers, BACON, EGGS, celery and cream cheese, broccoli, spinach, chocolate soymilk, coconut milk, almond milk, BUTTER, black olives, salad greens, chicken thighs, pesto. Yup, its all good at the moment. I have discovered if I keep a big bowl of pasta salad in the frig (which I do not care for) then dinners for hubby and me are a snap. I cook a nice meat, side veggie with butter or cheese or a salad and serve HIM the pasta...then I am not cooking different stuff for the two of us. It is really sinking in that I can do this for life...I am not going back this time. Already started taking my old blue jeans out of storage (have multiple sizes). And once I am done with one size, I am donating it instead of storing it so that I dont think about going back. The tips and encouragement here on FS are amazing and it is so good to have friends who have a common goal and journey. I am thankful for all of you in my life!!! And I am so pumped up that we are doing this together. As I peek out my window at the ice and snow, I am good with all that. I can hide in long sleeves and coats for a while longer. And then in a few months, when the floweres are blooming, perhaps we will be blooming with a new body and outlook on life. So, in spite of the cold and slush, etc. .....I am grateful for this winter time hopefully while the old me dies like the flowers to make room for the new!!!

Hi Sunshine! What a nice journal entry. And you ARE a beautiful flower in the midst of a world of 'weeds' (excluding the fine folks on FS, that is). You are truly a special person. SO happy you are coming to grips with the permanent potential this WOE has had - and you are finding what works for you as a family. Your plan to donate your 'fluffy' clothes is a grand idea, so as not to return to them later. Glad your fridge is stuffed with good things so that your planning and preparing this week will be snap! Thanks for being YOU and making a difference. You often make me smile!

All sounds wonderful, you are doing so well! Don't forget to keep the largest pants and shirt, have to compare when you get to your end goal! ~tig

Huzzah for the yummy stuff we can eat on Atkins. :) My husband is a pasta-head too. But we are mostly cooking separately these days. It is really freeing not to have kids in the house to do for, isn't it. :)

Wonderful journal! Yummy food stocked in your fridge too. So glad that you have found a way to make dinner for you and your husband work without much extra effort. Have a great weekend!

You are doing an awesome job. Way to figure out how to feed the two of you without making more work for you. Can't wait til spring to see how great we all look. There will be a flurry of pic posting for sure! We should set a date in spring, a picture taking day, and then post our pics to see how far we have come. Keep up the good work, so glad Atkins is working for you. Dr. Atkins - we love you.

Oh, I love that "I'm in love with life" part! :-) Did I tell you that your avatar is just striking? Hmmm... I have to go shopping too but, I suspect that you got a little too much. That always gets me in trouble because I really hate to waste food and "forces" me to eat (lol). It's true. Anyway, this journal entry of yours today is beautiful! Keep up the good work and the upbeat attitude buddy!
