Spicy Mexican Chicken Salad

Hot with lots of beans.

Ingredients

Directions

  1. Empty a drained can of mixed bean salad into a bowl.
  2. Toss with chopped lettuce, tomatoes, peppers, red onion and fresh parsley.
  3. Add the chicken breast slices.
  4. Squeeze over lime juice.
  5. Note: try swapping parsley for coriander and hot and spicy chicken for BBQ chicken.
