Zuppa Toscana

A slimmed down version of the wonderful Olive Garden recipe.

Ingredients

Directions

  1. In a skillet over medium-high heat, brown sausage, breaking into small pieces as you fry it; drain, set aside.
  2. In a skillet over medium-high heat, brown bacon; drain, set aside.
  3. Place water, broth, potatoes, garlic, and onion in a pot; simmer over medium heat until potatoes are tender.
  4. Add sausage and bacon to pot; simmer for 10 minutes.
  5. Add kale and cream to pot; season with salt and pepper; heat through.

Yes. Used turkey bacon as well as to cut down the fat. This is an okay soup. I put far more kale than all other vegetables as it is vitamin rich. It turned out more like stew which was find with me. It was not as flavorful as Olive Garden, but I am sure lots less calories. Close Second!

this is NOT low fat! whipping cream? And bacon? Not if you want to lose weight....

Turned out really well, but I used about 6 oz of bacon and only about 2/3 c cream- it really didn't need more than that. It would be nice to know serving size- I'm just estimating about 1 1/2 c and if I'm a little over, I'm not too worried because I lightened it up a bit. Seems like it made more than 10 cups, so 1 cup servings would be a bit low.

OMG...This is so good...I was very surprised at how close it was to the recipe that Olive Garden makes....I will keep this one for sure:)

I love this soup from Olive Garden, and get it everytime instead of salad. I am eager to try it. I don't care for ground turkey, so I don't know what to do about the turkey sausage? Maybe I would like it even though I don't care for the ground turkey.

YUM-O!!! This was delish...my family ate it ALL, down to the last drop! We substituted turkey bacon to make it less high in fat...but it was still just as tasty! Thank You!!!
