Spinach Eggs
An egg substitute scramble for breakfast that's hot and healthful.
Ingredients
Directions
- Use fresh spinach from the garden or produce department. Chop 4 cups of leaf spinach finely. The end result will be 1 cup of compact spinach.
- In a non-stick pan, spray fat free cooking spray like Pam.
- Place the cup of compact spinach in the pan. Heat on medium and cook until the spinach is done to your liking.
- Pour in a cup of egg substitute.
- Scramble and cook to desired consistency.
- Top with salsa or hot sauce if desired. A few other options (but all add calories) are shredded cheese and a flour tortilla to make a breakfast burrito.
- Note: you can use a food processor with a large bag of spinach. Chop the whole bag and separate into 1 cup portions in zip lock bags. They can be frozen and thawed as you use them.
