Polpette di Melanzane

Una ricetta sfiziosa che si appresta ad essere uno stuzzichino, un aperitivo o un contorno saporito.

Directions

  1. Tagliare a dadini le melanzane e farle cuocere in acqua salata bollente per 4-5 minuti.
  2. Scolare le melanzane e ridurle a purea con il mixer.
  3. Aggiungere uova, parmigiano, pangrattato, sale, pepe e prezzemolo.
  4. Formare delle polpette, passarle nel pangrattato e infornarle in forno già caldo a 200 gradi per 20 minuti o fino a che diventano dorate.

CHE MERAVIGLIA la proverò doman sera... solo devo trovare il sostituto del parmigiano e delle uova che ho a cena un vegano...detto da me che sono vegetariana... :) GRAZIE MILLE!!!!!!!
