Carrillada

Carrillada o carrillera es este trozo de carne de cerdo magra y melosa en una salsa de vino.

  1. En una olla exprés poner la cebolla picada, la carne, la zanahoria y el pimiento. Rehoga hasta que la carne pierda su color rosado. Añade las especias: laurel, pimienta, clavo y comino y el vino. Rehoga todo junto con el vino y reduce un poco. Añade ahora el caldo de verduras y termina de cubrir de agua. Tapa la olla exprés y llévalo a ebullición. Deja unos 20 minutos la carne en la olla exprés.
  2. Cuando pasen los 20 minutos destapa la olla y deja que se consuma y se espese el caldo de la carne un poco más.
