- Coloque una sartén grande sobre la estufa a fuego medio. Agregue el aceite y deje calentar un poco.
- Agregue el jitomate, cebolla, chile y orégano. Sofría por 8-10 minutos, o hasta que empiecen a deshacerse un poco.
- Agregue los trocitos de calabacitas y el jamón (si decide agregarlo). Deje en el fuego por 4-5 minutos más, removiendo de vez en cuando, (las calabacitas deben quedar suaves pero crocantes, para que no pierdan sus valores nutritivos).
- Sazone con sal y pimienta al gusto y retire del fuego. Sirva calientes con queso fresco espolvoreado.
