Roasted Butternut Squash with Rosemary & Balsamic

A very satisfying recipe that you can serve for Thanksgiving.

Ingredients

Directions

  1. Preheat oven to 400 °F (200 °C).
  2. Toss squash cubes with olive oil, balsamic vinegar, and rosemary. Put on cookie sheet or dish large enough to hold it in a single layer.
  3. Roast until squash is very soft and starting to get slightly caramelized.
  4. Note: No one will know how healthy this recipe is but you!

This recipe looks really good but I thought winter squash (including butternut) was not allowed during Phase 1. Is this a new addition to the allowed list in "Supercharged"?

its amazing how butternut squash tastes like it has so much sugar(cuz of the sweetness) but its au naturale flavor! I LOVE IT! so low in sugar but tastes so yummy

Made this tonight and the entire family loved it!! They gave it a big thumbs-up and this never happens. Instead of baking we put it on the grill in foil along side a pork tenderloin. Yummy!!

I cut the serving size in half for Atkins, but this is a great nutritionally dense food. I also added some melted butter when I served it. It is delicious, the herbs make a big difference.
