As promised: Slow Cooker Chicken Chili - it was amazing!
Ingredients: 2 onions, 5 cloves garlic, 3 boneless, skinless chicken breasts, 24 oz jar medium salsa verde, 4 - 15 oz cans cannellini beans, 2 - 15 oz cans pinto beans, 1 1/2 Tbsp cumin, 2 tsp oregano, 1/4 tsp black pepper, 1/2 tsp cayenne, 4 cups chicken broth
Dice onions, mince garlic. Put in crockpot. Trim chicken breasts but leave whole. Drain & rinse beans. Add salsa & spices. Pour chicken broth over all & stir.
Cook on high for 4 hours or on low for 8-10 hours. Remove chicken and shred with 2 forks, add back to crockpot and stir. Serve topped with grated cheese or low calorie sour cream.
I didn't add ingredients using the "add ingredients" button because it wouldn't allow me to put in the true amounts in cups or cans or ounces. Since we're all watching what we eat, just use common sense in portioning (unlike my man - who had 3 servings)

So I found a slow cooker white chicken chili recipe online and have it cooking in my crockpot. It's all ingredients that I can spell and recognize so that's something. If it turns out the way I think it will I'll add the recipe to my cookbook here. Starting to smell really good in here.
