One of the rewards of switching over to this low-carb WOE is I am encouraging myself to try totally new things. Not old things in new ways, totally new. To that end, yesterday I was out with my latina friend and we stopped in a
tienda
for me to get some fresh chicharrones. I bought some crema, which is a latino version of sour cream. Actually there are Salvadoran, Mexican and more variations, but one at at time, eh? Crema is just tastier than sour cream, it has a different mouth feel and is less 'sour'. The
new
thing I bought was fresh cactus leaves (paddles), known as
nopales
. I have seen them in jars and cans but didn't know what they were. Adriana pulled up some images of dishes made with the fresh ones on her Iphone, gave me a few pro-tips and I was good to go.
Last night I washed one, heated a heavy skillet and pan grilled it. I topped it with leftover chicken and creamed cremini mushrooms and a flourished swirl of crema. Muy deliciosa!
This morning I took another paddle and cut it in strips, parboiled it for 18 minutes and then added to an egg, sausage and parmesan skillet scramble. It added just that je ne sais veggie touch (lol, mixing my cultures here).
I have added something new to my vegetable choices. Score!

I did not lose weight this week; I accept that. In an attempt to 'get regular' I ate the sugar free chocolates. It did nothing towards that end (no pun intended). Mid-week, I sneaky-weighed and I was up 2 1/2 lbs from that experiment. For me, I have to count the sugar alcohols according to this formula: if sugar alcohols are the only carb in a food and <5 g., it is free. Think sugarless gum. If there are other carbohydrates besides the sugar alcohols then: divide the number of sugar alcohols in half and subtract that number from total carbs, then subtract dietary fiber to arrive at net carbs.
Here's an example:
Hershey's sugar free chocolate miniatures has 24 total carbs, 20 are sugar alcohol, 3 are 'fiber'. So 20/2=10, 24-10=14 14-3=11. So I record 11 net carbs.
(the old calculation just for comparison...sugar alcohols are deducted from total carbs then fiber is deducted. so 24-20=4, 4-3=1. Record 1 net carb)
Bottom line, I will not indulge in sugar alcohols again. (Especially since they were not laxative for me!) I started a probiotic daily pill that helps with ibs-c and I feel like I am returning to normal. Hooray. I will take my weight as it stands and be grateful that I have learned from these lessons.

Today has been a great day for me. Not talking about diet and exercise here. I'm talking about just all around, I'm feeling good, alive, full of possibilities. Remember the song from the musical Oliver, Who Will Buy? Oliver talks about the beautiful morning and blue sky, then says "Who will tie it up with a ribbon and put in a box for me? So I could see it at my leisure, whenever things go wrong. And I would keep it as a treasure to last my whole life long." That's sort of the good feeling I've had today. Who will buy this wonderful feeling?

Another game changer in the making? Just saw a post over on the Atkins website. The original poster said she logs her foods in FatSecret but logs all her vegetables in the snack area of her food diary so that her net carbs for foundation veggies are separated out that way. (She didn't say if she logs her snacks as parts of her meals but I'm guessing that would be the only way to make this work as simply as it does.)
I will start doing this tomorrow. Absolutely brilliant idea. The only hitch I foresee is when using a cookbook recipe the vegetables are all part of the whole.

In my research regarding sugar alcohols I found a web site www.caloriecontrol.org which is a website created for a council of major food manufacturers (think coca-cola co., hershey corp. etc. everybody is a member). I feel like I just found the holy grail of information explaining polyols (or sugar alcohols). The calculations are different than what I heretofore believed and armed with that information I now understand that on days where I have eaten polyols my net carb counts were inaccurately calculated. So. New day. New dawn. The light is on!
