Chicken strips (or pork or beef) stir-fried with broccoli, red pepper and chilli adding a little stock to make a sauce. Serve with rice or noodles or a wrap like fajitas (or if you're avoiding carbs, extra vegetables).

I’m having baked sweet potatoes and Linda McCartney sausages (they have lots of protein) and some baked beans for my tea. It’s one of my faves.

We are having homemade Bolognese sauce with courgetti and parmesan! I usually make for four then freeze half the sauce for days when I am busy.

How about salmon steak seasoned with sea salt and either grilled or dry fried with a little butter (1/2 teaspoon) and thyme. Mixed peppers and quinoa? Add peppercorn sauce to your salmon and serve.
