Tried a MIM this morning with a little cream cheese on top - not bad at all! And it was only 3.66 net carbs! My kids even kept wanting bites! :) Going to a cookout at my parents tonight - should be fun! Get to brainstorm some menus up with my mom who is going to join me in trying this Atkins thing out! :) Feelin' kinda crappy today - no energy and I think I may have an ear infection - yuck! Gotta keep on keepin' on tho - life is good! :)

How lucky for you to have your mom do Atkins with you. Please share any helpful recipes you guys come up with! I made a MIM this morning, too. Hit the spot!!! I used coconut oil in mine and omitted the cinnamon. Want to try some other variations tho. It was nice having something "bready." :-)
