I love beetroot soup but never tried with ginger.

I put approx 50g for 6 beets and throw in a couple of carrots and an onion and make a big pot that I can freeze some

I also freeze because I make a big pot. I need to try with ginger. I like mine with red kidney beans, vinegar or lemon and some sugar and I top it with cream and Worcestershire sauce for sweetness and sour. I love it but at the moment I’m staying away from it as there is too much sugar. I need to try your version as well.

I’ve cut out loads of sugar from my diet I can’t say that I miss it or my rolls of fat 😂
