NO DAIRY - HOLY COW!

I'm not a milk person, never have been. as a matter of fact, we don't even have milk in our house - we use unsweetened almond milk (yup - even in mashed potatoes, baking, etc.). I guess that was why when my doctor said no dairy I thought "no big deal". No big deal?! I am a dairy HOUND! I love cheese, cottage cheese, crema, cream cheese, heavy whipping cream, Greek yogurt and let's not forget coffee creamer!

I was given an extensive list of "Not Allowed" foods and food groups:
*no dairy
* no red meat
* no pork
* only lean cuts of hormone free chicken and turkey
* no "WHITE" foods (bread, sugar, potatoes, etc ...) - you know, yummy carbs ***I thought this was going to be my biggest problem but NO, it's the dreaded no dairy!

I had to figure out a way pretty quickly to make this one work. it's a learning process for sure but I'm learning how to make coconut milk yogurt from scratch (I'll share the recipe once I know it works), vegan cheese alternative for my beloved favorite all time food - PIZZA, as well as any other dairy cravings/needs I encounter. I will say this, I'm definitely learning a lot on this journey to the new me ☺

No / low dairy is so hard! When I was vegan, I made a "cheese" sauce from cashews and nutritional yeast. Not sure what nutritionists now say about the yeast, but it was tasty! Looking forward to your coconut yogurt recipe.

I have some recipes I could share with you :). Once you got used to it, it will get easier. What surprised me the most when I went dairy free was the amount of dairy foodcompanies sneak into food where you least expect them. Trying to find an antihistamin that was dairy free was my biggest task. But now I have been dairy free for over 3 years I have hardly any issues with allergies :) Oh and I make an awesome bread from buckwheat which is also gluten free.

Sorry to hear that - just remember to set aside the time that your substitutes are going to take to enjoy a dairy-like food item!

it's def hard in the beginning but after a long period of time I don't realize I am not adding it anymore. I use to put cheese on everything at every meal! now I really even use it less than once a month! and I feel so much better than I use too!
