I tried using coconut oil, for the first time, to pan grill some pork chops. They were very tasty. I was somewhat apprehensive about using it, because it was new to me. I read up on it, and decided to give it a try. I have some coconut flour, and will be experimenting with coconut flour coated chicken, fried in coconut oil, to make a low carb fried chicken. Has anyone else tried these products before? Though coconut flour is expensive, it will be worth it, for me to do some serious experimenting. I'll be doing the same with the almond meal I have on hand.

I also just tried the coconut oil for the first time to fry a thin slice of chicken breast. It came out very tasty. I bought the oil several months ago and like you was a little apprehensive about using it. Now that I have tried it I will be using it more often. Let us know how the coconut flour turns out.

Another wonderful alternative which I use for "frying" is almond flour. You can also use it in baking and no one will know the difference. I do use coconut oil and it has never failed me. In the MIM, I use almond oil or walnut oil or grapeseed oil and even coconut oil...makes them yummy and a lot better than other oils for us! Experimenting can be alot of fun!
