Options exist that are low carb, low fat just have to think outside the pizza box.

I get it, I totally get it. I find that if I think of the crust as just a vehicle for the STUFF...I can eat the stuff with a knife and fork and still get the melty cheesy ooey goodness feeling with some sauce and a pile of roasted veg. Gotta have good sauce, though. I do the same thing with Mexican STUFF...sans tortilla...and before you say it, I KNOW it's not the same ;-)

Try using a slice of eggplant as a crust, top with ground beef, mozzarella, onion and tomato sauce

If you like thin crust pizza, the low carb pizza I made last night was awesome!! Mission carb balance soft taco tortilla, 1 tbsp. spaghetti sauce (I used Prego), 1/4 cup shredded mozzarella, 6 thin sliced pepperoni and 5 green olives. Broil tortilla for 2 minutes to crisp. Take out of oven and flip tortilla over. Spread sauce and apply toppings. Return to broiler for 2-3 minutes to melt cheese. Keep a close eye on it--it will burn quickly! It was so good and filling--only 8.2 carbs!! You can play around with toppings too, just log them to get an accurate carb count. If I knew how to add a pic, I would so you could see it.

I make pizza once a week for me and my boyfriend. We each eat a quarter for dinner then take a quarter for lunch to work. I follow a LCHF diet. I've lost 45 lbs since around the first of February. A ditto to Hollipop on the Mission Carb Balance tortillas, they make an excellent low carb thin crust. I put on the toppings, then bake them at 450 degrees for 11 minutes on a pre-heated pizza stone. Usually that's dinner a couple nights a week, quick and very good.
