My Corned Beef and Cheese Frittata was pretty tasty, last night; I'm glad I pre-made it, before going to church last night. Tomorrow is going to be a challenge. I'll be going over to my cousin's house for Resurrection Sunday Dinner. I've been doing very well, with my eating, these past 4 weeks, and if all goes well, I'll be recording another loss tomorrow morning. It won't be easy, but I'm up to the challenge; and will stick to those things that are low carb, ie ham, baked chicken, and collard greens. The desserts will be easy to avoid, as I've been doing that all month already. My biggest temptation will be the mac and cheese, which my cousin is a culinary expert at making. :-) Anything other than that, and I'll be faced with having to get back on track.
