Feeling very stressed today & craving nachos. Instead of just stuffing my face like I usually do, I got inspiration from someone's deconstructed hamburger salad (I'm sorry, I can't find the post so I can give credit). Started with base of lettuce, added some tomatoes, then some chopped chicken breast mixed with canned tomatoes & chilis. Topped with some fiesta cheese & a small bit of tortilla chips crushed. I wish I had more to toss in it but low on groceries & didn't want to go out for anything.
