Feeling great once again!!!! I made this soup as I decided to take all meats out of my diet. I will allow myself a serving once a week or so as I really want to try and bring down my cholesterol. I'm on 30 mg of crestor and I hate taking it!!! This soup is my first bean based soup of which I would never eat these kinds of beans before but it actually tastes awesome!!!! I left out the white wine as that just adds sugar and replaced the kale with spinach, and to be honest it doesn't need it!!

I love soup. Delicious and versatile. I encourage you to explore any that cross your mind. If going meatless consider the very hard and more pungent cheeses for spiking flavor. Only add at serving, but the rinds can be ever so useful during the cooking.

This is one of my favorite soups. A little more time consuming (I use a food processor to cut veggies) but so worth it. I add extra beans and you could omit the ground turkey as it would still be good.
