We went to a German restaurant tonight and I had Schweinshaxe (pork shank) which had been cooked on a rotisserie for three hours with the skin on so that it became crackling. Wow. I am fairly sure that the pork shank entry on FS doesn't have enough fat in it. It came with dumplings and sauerkraut that I fed to my table mates. The Bavarians like to put sugar in things and the kraut tasted to sweet to me. But the shank was a winner and I will so go back!
