Coronation chicken salad. I didn’t make the coronation chicken, trying a few pre-prepared things to take the load off a bit with my new job, but to be honest it wasn’t very nice and was pretty calorie dense. I’d have rather just grilled a chicken breast!

Shame you didn't like the coronation chicken, but the salad looks great.

I’m starting a new job on Monday, and I don’t want to derail my progress if things get a bit full on. I picked up a copy of Slimming Eats Made Easy, loads of ideas for healthy after work food so I don’t give myself an excuse for ‘can’t be botheredness’ 🙂

Thanks, Mutchie! Ceehan, definitely the right idea to plan tactics in advance. I have a 6ft6 husband and two teenage girls, with all that entails in terms of planning food 🤪 Definitely no time for multiple options! Fortunately they like most things. Good luck with the new job!
