Oh thanks everyone, sure the recipe is really easy: I fried a res onion in about half a tablespoon of oil until soft then threw in some spinach, once wilted I added 4 beaten eggs (2 people) beaten with a bit of water added, quick stir in and then dropped a few halved cherry tomatoes on top, then popped under the grill until cooked. Easy peasy. I am rubbish at omelette so always do it this way.
