Hubby hurt his back and missed work, so I gained a whole bunch eating cheap starchy food, so we could afford to feed ourselves, but now finances are getting back on track, and I'm so happy to be able to eat healthfully again!

I totally know what that's like... I have resorted to canned tuna/salmon, canned veggies, canned fruit and beans when I can't afford fresh, but I'm supposed to be watching my sodium, so I gotta be careful- canned good have lotsa sodium. Have you tried steam-in-the-bag veggies? Those rock, edamame being my favorite, but I can even choke down the broccoli and the asparagus is pretty tasty with lemon juice and dill and a bit of olive oil+ black pepper.
