I make a wonderful cauliflower mac and cheese that has actually become our go to. Portion control, moderation and recipe alteration to retain the essence of the original dish while mitigating the objectionable carbohydrates. For instance, for a serving for 4, I typically use 3 ounces of dry elbow macaroni, 12 ounces of cauliflower, about 2/3-3/4 cup 2% milk, cheeses of your choice plus I use nutritional yeast in my dish (tastes like cheese and nutritional superstar). I make the dish so that it has a thinner sauce that easily coats all components. You taste the macaroni, it looks totally like macaroni and cheese while cutting back a bit on carbs and fats. When I make it, it typically is not an entree, but a side dish, served with asparagus and a salad.

Jr- this meal looks perfect to me. You have lean protein, vegetables, carbs and dairy fat. There is nothing wrong with pasta especially as a side dish to a meal. This plate doesn't appear to have extra calories from sauces or butter and you kept the cheese to a minimum!! My only suggestion, and you did not ask for one, was to add another cup of vegetables. They are lo calorie and provide bulk whoch helps with keeping a full feeling in your belly. Stay well!!

Thanks for the suggestion Crazycatchick. Yes, I'm eating a lot more vegetables. 🙂 I'm not fighting or eliminating carbs, everyone have their own way.
