Celery is about the only thing I don't like to eat. That and pak choi! I wonder if they are related?

😋good soup for cold weather!
about celery: I don't like it either, but I know the recipe for a delicious salad (some celery, an green apple, a cucumber, some tuna from a can, sauce like mayonnaise

That soup looks good, and you have inspired me. Is that pak choi in there? I live in France and it is called Bok choi here, I wonder if that is the same? I have some in the fridge for stir fries. OK so I need to look up how to make the soup into minestrone! By the way I love celery! I like it cold with apple and toasted walnuts, and hot like you have it here.

Hi Hecate, Minestrone is super easy to make. In there you can see cavalo nero which might be called chou noir maybe in France, but in UK it seems we stick to the Italian! We also call this Get Well Soup in our house as it is so comforting.
I make a mirepoix with onion, celery and carrot all roughly chopped, add some garlic and then stock (I usually make this the day after we have used a whole chicken so I can stock that), and some herbs (as you wish, oregano, thyme etc. Then I add tinned tomatoes and a bit later on some kind of greens. But there are no rules, so perfect for whatever is in season. Some people might add potato, some might add bacon at the start or bits of pasta at the end, but if you do either of those it doesn’t keep so well and I usually make enough to last 3 days!
