They can send a man to the moon, but can they come up with a recipe for liver that'll make it taste good without dousing it in Ketchup.

Does anyone have a healthy recipe for beef/pork liver?

The secret to good liver is do not over cook it. Wave it over a hot pan :-), smother it in fried carmelized onions and add sour cream. A side of mashed potatoes (or the carb lovers ersatz mashed potatoes made with cauliflower).

Agree. Do not overcook. We pan saute with a very light cornmeal/flour dust in an oiled skillet. Caramelized onion is a must. (Remember: Hot wok (pan) + cold oil = food won't stick)!
