Ingredients
-1 head of cauliflower
-1 container of fresh made black bean and corn salsa (usually I’ll make some on my own with black beans, pinto beans, yellow corn, cilantro, jalapeño, and onions, but I store bought this to save time)
-Guacamole
-3 garlic cloves
-Olive oil
Instructions
1-rice cauliflower in the food processor (1 cauliflower head makes about 4 cups)
2-prep and mince garlic. Then in a large pan, heat some olive oil and add garlic cook for about 30sec so it’s fragrant.
3-add cauliflower rice to cooking pan until softened. I cooked mine for about 5-7 min I think
4-divide rice into 4 containers, divide black bean and corn salsa into 4 containers. Top with 1-2 Tbsp guacamole

Oh I also zested a lime into the completed cauliflower rice and squeezed the juice in there. I did the whole lime, but it’s really to taste. And o added some chili powder and cumin to the cauliflower rice, but again you don’t have to. It’s just as good without it

Sorry one more thing! I cooked some steak (I got the small steak chunks from the meat section) and threw about 1/4 cup in there. I usually don’t do it if I make my own bean and corn salsa though.
