I am TIRED today. Just have to make it a couple more days, then it's the weekend. This week has been really busy at work and home, so I'm going to be glad when it's over and I can start fresh next week. :)

I got my run in last night and it's the fastest time I've had so far. I wasa surprised because my hips and knees were killing me, but I pushed through, took a short walk in the middle but got to the (imaginary) finish line. Tonight I won't have time for a workout because my son plays baseball as soon as I'm off work, and then when we get home I'm going to try to go to bed early. Hopefully if I make it to bed at a decent time I'll be able to get a workout in tomorrow morning.

I ate over my RDI yesterday, but I was starving. We had a carby dinner that I ate too much of and that didn't helped. Tonight will probably be another high carb, somewhat junky dinner because we're eating quick. I need to find better quick dinner recipes for nights like this. Luckily we only have a few games early, so for the most part we should have plenty of time to make a decent dinner. Now, getting my family to eat better is a whole other challenge.

Tomorrow I have an insurance "physical" first thing in the morning, then have a doctor appointment with the joint doc a little later. When I get back to work after those appointments, everyone will be gone, so it's going to make for a long, boring Friday having the office to myself. Oh well, I guess I'll have plenty of time to get those projects done that I've been putting off. :)

My crock pot is my defense against high carb quick dinners. I throw a protein in before work, and when I get home all I have to do is make some quick sides. McCormick has some great marinades and seasoning that really make a crock pot meal fabulous. I have a feeling I will be getting a lot of crock pot meals while I'm in school lol. Congrats on your new time! That is a huge accomplishment & non scale victory. It might be long and boring, but at least it will be Friday lol. We are almost there! Have a great day yourself Mary!!

Whenever I want to fall back on the carbs, I just remember that it takes the same amount of time to cook meat and veggies. If meat is already thawed, you can do a quick dinner of meat, and boiled veggies in about 20 mins and don't forget the whole family could help with the prep and cooking.

Yep, I need to find more crock pot meals, and I need to remember to have chicken out of the freezer and some microwave steamable veggies ready. As long as I have a plan I shouldn't have any excuses not to get a healhty meal. I'm going to be looking for some good seasonings this weekend when I go shopping!! Thanks guys!
