Something that has helped me; When I make my healthy dinner, I make enough for leftovers (breakfast or lunch). I love leftovers so this works for me. YAY!! Makes some of the stress of eating right each day less. :O)

Great idea!! I try to do that, too, but sometimes healthy = good and my son or husband gets to it first!!! LOL

I like it. I have the same type of plan only I can eat the same thing...same breakfast, lunch, or dinner everyday and love it just the same. :))

This is so smart and would save time and money. I wish I would eat leftovers. Not a fan.

Rksoup, if you dislike leftovers, consider just cooking extra entree (Double the seasoned ground beef/turkey, slowcook a brisket OR take one day a week to bake/grill a whole sheet pan of herb chicken breasts). Separate and freeze so you have the protein ready and can easily slice/chop and add pasta & sauce. My family is not big on leftovers but I've never had complaint over a re-purposed meal. They never know today's turkey enchiladas was pasta bolognese two days ago or that today's shredded bbq sandwiches started life as sliced brisket! Might help top rint a blank calendar and throw on the menu items that can have double-duty entrees. Very smart reminder, KimReed!

i got a good deal on a big slab of pork ribs so I cooked them up on Sunday and sliced them into individual ribs. I ate them a few times this week. They heat up quick and easy and I just can't seem to not like pork ribs even as a leftover. All I had to do was add veggies and it was ready. Made my life a lot easier.

I am so glad that we are able to use leftovers. I love cooking, but sometimes it is nice to not have to worry about it. I'm happy to have heard from all of you. Take care!! :O)

I would love to do that, but I found out when I make extra everyone seems to eat extra and I don't get enough leftovers. Once in a while I'll get enough for my lunch the next day.

Great idea Kim. Thanks. If I have 'yummy' leftovers I have to hide them from my kids though :) Love having a mini fridge in my room. They KNOW not to take from there.
