Thank you, it was great! I followed this recipe, except only used half the suggested chickpeas and feta topping and that was plenty. Also I couldn’t include the aubergine as the one I bought was off 🍆😢
Would be great for batch cooking.

Great thanks for that. I do love aubergine but you are right it can taste a bit funny if it's not 'ripe'.
