That looks very appetizing. I've never done pad Thai so I don't know what that is. I also don't know what miracle (zero carb) noodles are either but they sound like something I wouldn't mind incorporating in my soups. :-P

It’s called shirataki noodles they are made from a plant. You can buy it from the Asian store or on Amazon. It has kind of a chewy texture like Korean (potato starch) noodles.
