All I can say is yuck to veggies, lol I am going to have to get over eating raw crunchy veggies. Didn't realize I was such a picky eater and how few veggies I was eating besides lettuce and tomatoes until the Nutrisystem defined vegetable. I am definately not a veggie person and I will have to get creative, or I will be eating loads of lettuce only. On a better note, I am starting to job again after my ankle sprain. Small steps.

Where does it say they have to be raw? :) I never ever eat raw veggies. I use onions, peppers, mushrooms, artichoke hearts, brussel sprouts, green beans, spinach, cauliflower and more. You can add them to your foods as fillers or use them as sides. You can roast them, steam them, sautee them or any other method you can think of with minimal oil.

Good idea. I will try sauteeing. Do you ever microwave them? I am limited in time sometimes. And as you may have figured out don't cook much:)
