Looks delicious. The only people who promote the idea that carbs are inherently bad are quacks with a single-minded focus that doesn't allow them to see the bigger picture. Carbs are staple in most cultures around the world, and unless you have a medical problem (your body doesn't produce insulin or not enough) and have been told by your doctor not to eat or limit them, there is no reason not to eat them.

Sounds/Looks great! I just made/had beef stir-fry and steamed, white, rice. Homemade.

I agree with you. That was another reason I decided to stop keto and opt for a more low carb approach. It was summertime and I wanted some fresh melon soo bad. Fruit is a carb but it’s low calorie and I was restricting myself from something filling and satiating. But it did help me learn how to dial back the carbs. I used to fill up on soo much rice. Learning how to track macros through keto actually got me to track my intake, soo I will give it that benefit.

I eat fewer carbs than I used to Carmine (used to eat a big plate or two of white rice several times a week) but my goal is to get them up to where they used to be in (the 200-350 range) and stay active.
