Had a good day, worked at home today to get a project finished up. Not quite done but must get to the office tomorrow for first potluck of the week. I made a crock pot sweet & sour dish with chicken, spinach & chicken sausage, onion & peppers, fresh pinapple, tomatos & sugar free apricot jam and a good dose of Thai hot pepper sauce. It came out kind of like a jambalya without the rice. It will pass muster I am sure!
2nd pot luck this week is Thursday, think I will bring a spinach salad! Always bring something I know I can eat, count and be full on for lunch.
