Had a good day today. My folks came for Sunday dinner today after church. I had spent a good deal of time remaking alot of our family favorite recipes and putting them into my cookbook here for easy selection. A favorite of ours has always been my grandma's Bavarian Pork Roast and I have fond memories as a child of smelling that roast when we would walk into her house on Sunday after church for our family gathering. Always had around 40-50 people at my gram's farm every Sunday. We have a huge family as my mom is one of 12 kids. So anyway, I did a remake of that recipe and used pork tenderloin, used veggie broth instead of dark beer. The taste was all the same. I also made sauteed chard, roasted acorn squash and homemade applesauce. Needless to say, dinner received rave reviews and I stayed on plan for the whole day!
Progress is being made on putting the universal together. We did step 1&2 on Saturday, finished step 3 today and have 4 left to go which is all the pulley assembly. I will post a pic when we are done with it.
