Hey :) succes or not? I think, aubergine requires more olive oil than other products. I roasted the half aubergine for a few minutes, afterwards the aubergine pieces / Tomato / onion - mixed with Feta und herbs. Finally the filled aubergine was in my air fryer (180°) for 20min. How did you prepare it?

Hi Webs! Oh... I understand why yours looked so much better. You are right, I was cheap on the oil. I scooped the flesh of the eggplant, and prepared it with onion and garlic in a frying pan. Meanwhile, the aubergine ”boat” was on the oven, I poked it with a for fork and added salt, baked for 20 or 30 min, then I added the filling and feta on the ”boat” and put back in the oven for 10 min. I did it again later in the evening with the other half of the eggplant and accidentally forgot it in the oven, but it turned much better, the flesh was softer and the feta golden color! Next time more oil and less hurry!

in the past i cooked the aubergine in the wrong way a few times - to stingy with oil and just in the oven. Last week it was the first time the aubergine as protagonist was a succes ^^ You will find your right way.
