I make this quite often. Quick and healthy.
I use frozen shrimp and part of a bag of frozen peppers on onions. Toss som chili powder, cumin and salt in.
Then just make a pico de Gallo or toss some salsa out
I went overboard yesterday for cinco de mayo and had chicken and shrimp and grilled onions and a corn salsa. But usually is simple and quick.
