RATIO OF INGREDIENTS for a matzo ball: one egg, 1/4-cup matzo meal, 1 tablespoon of fat, and 1 tablespoon of liquid. recipe for biscotti: 2 c almond flour, 1/4 c coconut flour, 1/2 tsp baking powder, baking soda, xanthan gum, pinch of salt, 1/2 c stevia, 1 tbs cinnamon. Put dry ingredients in a bowl. In a separate Bowl crack 2 eggs, 1 tsp vanilla, 1/4 c of almond milk. Whisk all ingredients together. Melt 1/3 c butter, or ghee and add to wet ingredients. Use a mixer to beat wet ingredients. Slowly add dry ingredients to the wet. Mix gently until dry ingredients form a ball. Set oven to 350° for 30 minutes. Pour the ball out onto greased foil or parchment paper. Do not flatten the ball. Just gently Pat the top to get it to form into a 1/2 " pie shape. Cut into wedges of 8. Separate wedges slightly and bake for 30 mins. For the frosting: 4 oz of cream cheese melted, 2 c of powdered sugar, 1 tsp of vanilla into a small bowl. Used mixer and mix it high speed until fluffy. If it's too dry add a tbsp of milk and blend again. If it's too wet add more sugar. When scones are finished baking, let them cool for 10 mins. Frost
