RATIO OF INGREDIENTS for a matzo ball: one egg, 1/4-cup matzo meal, 1 tablespoon of fat, and 1 tablespoon of liquid.
recipe for biscotti: 2 c almond flour, 1/4 c coconut flour, 1/2 tsp baking powder, baking soda, xanthan gum, pinch of salt, 1/2 c stevia, 1 tbs cinnamon. Put dry ingredients in a bowl.
In a separate Bowl crack 2 eggs, 1 tsp vanilla, 1/4 c of almond milk. Whisk all ingredients together. Melt 1/3 c butter, or ghee and add to wet ingredients.
Use a mixer to beat wet ingredients. Slowly add dry ingredients to the wet. Mix gently until dry ingredients form a ball. Set oven to 350° for 30 minutes. Pour the ball out onto greased foil or parchment paper. Do not flatten the ball. Just gently Pat the top to get it to form into a 1/2 " pie shape. Cut into wedges of 8.
Separate wedges slightly and bake for 30 mins.
For the frosting:
4 oz of cream cheese melted, 2 c of powdered sugar, 1 tsp of vanilla into a small bowl. Used mixer and mix it high speed until fluffy. If it's too dry add a tbsp of milk and blend again. If it's too wet add more sugar.
When scones are finished baking, let them cool for 10 mins. Frost

Good morning wifey, Happy Easter to you. I posted the two recipes that you wanted. You can adjust them however you'd like. On the scones if I use the cinnamon I like raisins in it. If I use different fruit I don't use cinnamon. For the matzo balls: make small 1 1/2 inch balls (they expand) we use our home made chicken bone broth for the liquid and we also used the chicken fat off the top of the broth. For the matzo meal we made that out of the crackers. Mix the matzo ingredients together and if it is too wet or sticky add extra matzo meal. Boil the matzo balls in the chicken broth for 2 hours, and then let it sit and absorb all the spices overnight. The next day they were just delicious. For the spices in the broth we used: 1tbs parsley, 1tbsp Dill, 2 tsp garlic powder, 2 bay leaves. We also had a lot of vegetables in the broth: 2 chopped carrots, 2 celery ribs chopped, 1 onion chopped. 2 bay leaves.

wifey, sorry the recipe above is for scones. I got the wrong one. I will go back and find the biscotti and post it for you. That one is quite a process.
