We boil a gallon of black tea, let it cool, put in the scoby and starter, let it sit on the counter for a week and test it. Once it's to our liking, we pour it into lock top bottles and put fruit in it. We keep out a cup from each half gallon and pour it into the new tea that we make adding the scoby. I do not use the continuous Brew in a big jug. We like the second ferment with different flavors. After a few days of second ferment, we put it in the refrigerator. That is our system. LOL

I finished making some to give to a neighbor. She said in Russia they give it to children too. She said they call it mushroom tea, which is funny. Chinese call it red mushroom tea. 🐸 ☕️
