Yep I'm sure, I use a small skillet and a small plate, it looks bigger than it is LOL.
It is one whole egg with two additional egg whites, one slice of turkey ham (33g), 50g of mushrooms, 50g of onion, and 50g of frozen chopped spinach(thawed). The cheese is a polly-o light twist- mozzarella and cheddar.
Recipe
Preheat oven to 350°
Chop Mushrooms, Onions and cheese
whisk the whole egg and additional egg whites in a separate bowl
Spray oven safe pan or skillet with cooking spray (I use a small cast iron skillet)
Add mushrooms and onions and cook over medium heat until the mushrooms begin to release their liquids
Add Turkey ham and spinach and cook until heated through
Remove from heat and pour eggs over the mixture evenly
Add chopped cheese stick and place in the preheated oven for 12-15 minutes.
